I would go for a AMD Quad Core CPU (not out yet), experts say that it is guranteed better than Intel. One reason why is because AMD uses a single chip CPU instead of 2 seperate ones like the one Intel is using right now, so transmission between the two will be slower compared to a single piece.(see below)

Since you are getting a Quad-Core CPU, you can't miss out on a good GPU, I would go for the Nvidia 8800 GTX or better stil 8800 Ultra @ 512 MB of memory and above. Or even better still, get 2 lower memory and 8800s and SLI connect them. It will be faster and acting like a dual core CPU.
Or get a 3 way SLI if you are a high-end PC manic, or even better wait for quad SLI... lola little more info on SLICode:
