I would go for a AMD Quad Core CPU (not out yet), experts say that it is guranteed better than Intel. One reason why is because AMD uses a single chip CPU instead of 2 seperate ones like the one Intel is using right now, so transmission between the two will be slower compared to a single piece.(see below)

check this out: (let it load, turn on your speakers)

Since you are getting a Quad-Core CPU, you can't miss out on a good GPU, I would go for the Nvidia 8800 GTX or better stil 8800 Ultra @ 512 MB of memory and above. Or even better still, get 2 lower memory and 8800s and SLI connect them. It will be faster and acting like a dual core CPU. Or get a 3 way SLI if you are a high-end PC manic, or even better wait for quad SLI... lol

a little more info on SLI
Code:
What is NVIDIA SLI Technology?
NVIDIA SLI technology is a revolutionary platform innovation that allows you to intelligently scale graphics performance by combining multiple NVIDIA graphics solutions in a single system with an NVIDIA nForce SLI media and communications processor (MCP).

How Does SLI Technology Work?
Using proprietary software algorithms and dedicated scalability logic in each NVIDIA graphics processing unit (GPU) and MCP, NVIDIA SLI technology delivers up to twice the performance of a single graphics solution.

For your PSU (power supply unit) get something like 700 watts above to support your quad core CPU and your SLI etc...

There are a few quad core versions yet to be released. I haven't been updated lately, but I know that Opteron already has it's quad core released.
